5 things


5 random things I want to do...and they aren't in any particular order.


1)  Travel the world and work in a mission somewhere for awhile.
(o.k. many that is two in one)



2) Own a coffee shop




3) Go skydiving




4)  Own one of the following cars.






5) Go on a BIG long hunting trip in the mountains and get myself a moose and an elk






Well, at this point I don't have the money to do all that. I guess I'll have to wait awhile.

Awesome-Tasting Food



The other day we were having company, so I made Ranch Veggie Pinwheels.  After Christmas-caroling one time with my friend Abby, she pulled out these tasty little things for a snack. I had to have the recipe, that's when she told me that it didn't really matter what you put in it, besides ranch dressing mix. 
The next time you're hungry for a snack you'll have to try these things.





Ranch Veggie Pinwheels

~1 package cream cheese
~1 package ranch dressing mix
~chopped red and/or yellow peppers
~chopped broccoli
~chopped celery
~and any other chopped veggie you want
~tortillas or wraps




Mix all ingredients together except tortillas or wraps. 
Spread mixture on tortillas and then roll up tightly.




Refrigerate for 1 hour or overnight. (I like to do it overnight.)




The next morning, cut into slices. Place on a platter or container. Serve immediately or cover and refrigerate.

rain....



 

Yesterday it rained. 




I wish it was still raining. 
The Kansas ground needed it so much and could still use some more.



If it was still raining I'd be out running in it like Marianne. 
You know, running in the rain feels very good.


Or perhaps, I'd go for a horse ride.


But.......


...instead I went outside and grilled hamburgers.  They turned out very good.

So, what do you do when it rains?

Here are the pictures of the white mints I've been making.
You can't see the detail as well though since they are white.




Well, tomorrow (at the wedding) they should taste really good.




I think the white roses are my favorite.

Awesome-Tasting Food!


This has been one of my favorite veggie recipes and we only discovered it last fall. 
It is sooooooo good!  Hope you like it.
Oh, and yes, I did put ALL the ingredients this time. Sorry about that. :)





Roasted Harvest Vegetables

Serves: 9    Prep: 20 min.    Bake: 30 min.
  • 8 small red potatoes, quartered
  • 2 small onions, quartered
  • 1 medium zucchini, halved and sliced
  • 1 medium yellow summer squash, halved and sliced
  • 1/2 pound fresh baby carrots
  • 1 cup fresh cauliflowerets
  • 1 cup fresh broccoli florets
  • 1/4 cup olive oil
  • 1 tablespoon garlic powder
  • 1-1/2 teaspoons dried rosemary, crushed
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Place vegetables in a large bowl. Combine the remaining ingredients; drizzle over vegetables and toss to coat. Transfer to two greased 15-in. x 10-in. x 1-in. baking pans.
Bake, uncovered, at 400° for 30-35 minutes or until tender, stirring occasionally.

two main attractions


This week we got two new things at our house. 
My sister, who got married last year, came to visit with her new baby. We were terribly excited to get to see Yoanna for the first time.

I'm having so much fun with her.


Yes, I'm holding her and checking email at the same time.



I don't want to see her leave...



 
And the other attraction is horses...


Our neighbor is trying to regrow his pasture, so he is putting his horses on ours for I don't know how long.  Above you see Walker and Rush.


This one is Cali. Right now she is my favorite, except that she has cancer so she can't go that faster than a walk. They say she is getting better


My little sister, Addy, is in heaven. Addy has wanted a  horse of years.





At this moment there are only 3 but I'm pretty sure he is going to bring about 7 more over. We'll have horses running out of our ears...

Sorry that they aren't the best photos. They are the only ones we have at this moment and I'm too lazy to go take some different ones. Btw, I didn't take these pictures.  :)
