Awesome-Tasting Food!

Today's recipe comes from a friend. It is the type of recipe everybody has their own of. And you also don't really need a recipe for it I think. I just like to know what people put in it and add my own amounts.

If you've never heard of Chicken Salad before, than I don't know where you're from. And you're just about too. This is something we family (most of it) loves. My brother-in-law had never heard of putting fruit (grapes and pineapple) in it before. I thought it was odd that he thought it was odd. That sounds just a little bit funny. Anyway, have you ever heard of that before? Just curious.

One of the secrets to this salad is fresh black pepper. It smells and tastes so good.

Chicken Salad

2 chicken breasts, cooked and chopped
4-6 celery stalks, chopped
green and/or red grapes, cut in half
onion, chopped pretty small
1 or 2 garlic cloves, minced
2 or more boiled eggs, chopped
1/2  to 1 cup mayo
2-4 tablespoons chicken broth
Freshly ground black pepper
1 can chucked pineapple, cut into fourths
1 can water chestnuts, cut into small pieces
sliced almonds

Mix all ingredients together.

Add more of anything to make it taste right. Refrigerate until cold. Spread on bread to make a sandwich or eat by itself.

Enjoy and tell me what you think.

inspiration...

With it being such a pretty morning outside, I was in the mood for some of my Tazo Passion Tea.
That stuff tastes soooo good.
I wanted more than any of our coffee cups could hold, so out came a travel mug with no lid. interesting

With the bright pinkish-red color, this tea is too pretty to resist.

I've talked about this before in a different form here.

While you're here please, please enter my giveaway. You could win something really awesome!

Awesome-Tasting Food!

At my uncle's house last month he made some corn like this and it was great. If you haven't had grilled corn then you need to make some. It is really good.

Santa Fe Corn
Prep: 10 minutes + soaking
Grilling: 25 minutes

 Ingredients:
6 ears of sweet corn in husks
1 tablespoon butter
2 garlic cloves, minced
1/4 cup steak sauce
3/4 teaspoon chili powder
1/4 teaspoon ground cumin

Soak corn in cold water for 1 hour. Meanwhile, in a microwave-safe dish, combine butter and garlic. Cover and microwave on high for 2 minutes or until garlic is softened, stirring once. Stir in the steak sauce, chili powder and cumin; set aside.

Carefully peel back husks from corn to within 1 in. of bottom; remove silk. Brush corn with sauce. Rewrap corn in husks and secure with kitchen string.

Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill corn, covered, over medium heat for 25-30 minutes, turning occasionally. Yield: 6 servings.

My Memories Software Giveaway & Review

As most of you know, that is if you've looked around my blog, that I love to make cards. Anything to do with scrapbooks and paper is up my alley. It is a very long alley needless to say.  A couple weeks ago My Memories asked me if I would like to do a review and giveaway for My Memories Suite 2. I was very excited partly because doing giveaways is lots of fun and because I've never used a program like this before.

At first I wasn't sure what this software was going to be like. All I had to do was download the it on my computer and dig in. I didn't have to wait for it to come in the mail, which was really nice.

The first time I pulled the software up I totally forgot the time and was on there a lot longer than I had planned. Making pages and cards is so easy and you can make about anything you want. Even my younger brother and sister have had fun with it. In the end I like a lot more than I thought I would.

These are just a few of the things I've made with the program.

Below are some promo clips you can watch.
On YouTube you can get about any tutorial you want.

please take me...

If you need a cat come and get one...or  two or three or four. We have way too many cats around our place. One of the mama cats had another batch a couple weeks ago and we have another cat that is pregnant. So far that is 4 litters for us this summer. And when you have cats that have 9 on their first litter you can totally understand why we have too many. Thankfully, that time not all of them lived.

Ok, I will admit they are cute. But they also grow up.
So far we have gotten rid of 4 and we still have 4 more.

Do I see any takers???

Kansas State Fair!

The fair has always been a tradition (a very fun one) for my family. So, of course, we had to go this year. On Monday the fair lets everybody in for a dollar or free if
they have a Dillion's card.

I actually rode the Farris Wheel this year. Usually I don't waste my money on rides. For some reason Charis, Addy, and I decided that was something we needed to do. I really thought it could have gone a lot faster. Maybe if I would of paid more the guy would have made that happen...

But, when you're stuck at the top you sure can see a long ways.
A view don't get from just anywhere.

Walking through all the farm equipment can make you want something you don't need.
This is Titus...dreaming. It would be a ton of fun to have lots of 4-wheelers

For the pass couple of years, Turkey Hill has given out free ice cream. They happened to be giving mint away today. Cheers!!

Walmart was giving out smoothie samples, except you had to work for them. The blender was hooked up to a bike. Thanks to my Dad for the smoothies.

I didn't realize someone was taking my picture. :) I think I was telling her to not take my picture. My siblings and I had so much fun at the Nascar Simulator, which was very addicting. The only thing that kept us from staying was the line. And yes, I did win my share amount of times.

We love to go through all the building and collect the free stuff. You end up throwing a lot of it away. :) My family used to work at the Kansas Honey Booth. This year we didn't because our church had a booth and we helped with that.

Titus and Isaac found the National Guard booth to their liking. I think this is harder than it looks.

Since it is "Dollar Day" you see about everyone you know.  Addy and I are with some friends that come every year like us.

You can get about any type of pictures here. Of anything and anybody. Charis took most of these.

The train used to be fun until your legs get to long. It is kinda tight.

Here is our church booth. My Dad and a friend, Caleb, are working it at the moment. This booth has a replica of Noah's Ark set to the HO scale. In the front is a ramp with animals walking up. We even had dinosaurs.  You can draw so many conversations with this thing.  We also gave out a ton of materials.

This one gives more detail.

For supper I had a Gyro, which are awesome. It's grilled garlic chicken on a pita with stir fried veggies and sauce. Very, very good. You really should try one.

Isaac and I decided to try fried oreos. I know, it sounds awful and gross, but it's not everyday that you get a chance to try things like this. Only don't watch the people make them, unless you don't plan on eating any. The oreos turned out a lot better than I thought they would. They actually tasted really good. I could only eat one though.

If you can't tell by now, I really like going to the fair year after year. I guess I looked older this time, because I didn't get any of the collage offers like I did last year. hmm...

Do you go to your State Fair or do you like stuff like that?

Awesome-Tasting Food!

One of the best Mexican dishes ever!! In my opinion anyway.  This used to be a dish we never made and then all of sudden, we were making it a lot. Then we stopped (I don't know why) and today my mom said, "Oh, lets make chimichangas again."  Yippee!!

And if you don't like tortillas, you can just scrape the filling out onto a salad or something. Oh, and the more picante sauce you put on, the better. Serious.

Chimichangas

1/2 teaspoon salt
1 lb cooked and drained, ground beef (you can use sausage)
1 clove garlic, crushed
1 teaspoon cumin
1 teaspoon oregano
1/4 cup green chilies, chopped
1/4 cup picante sauce  ( I use more)
1/4 cup sour cream
2 tablespoons cider vinegar
melted butter
7 to 8 flour tortillas, warmed

Combine all ingredients except butter and tortillas. Coat a 9 by 13 baking dish with the butter. Place a scant 1/3 cup filling in center of each tortilla. Fold envelope fashion and place folded side down in baking dish. Bake at 450degrees, uncovered for about 15 minutes or until nicely brown.

Serve with sour cream, salsa, rice and beans, chilies, chips, lizano salsa, cheese, olives, jalapenos, guacamole, and anything else you can think of. :)  My favorite is drowned in salsa with some lizano on top. YUM!!

last week...

I've had one of the best weeks in my life.  My sister Charis and I went to Texas with a friend to spend the week helping a family get ready for their daughter's wedding this last Saturday. The whole week reminded me of exactly a year ago when my sister got married. We did about everything wedding-wise you can imagine.

One thing I need to mention is that this family loves dove chocolates.
I don't think I've ever had so many doves in my life. In fact Dove could have sponsored this wedding because they were everywhere.

We did a lot of decorating and the place turned out really pretty.

I liked watching the cake being decorated. That was really neat.

The wedding went really well and I'm terribly excited for the couple. The food was just amazing. This picture is barely touching it.

The hotel we stayed at was very nice. We got a kick out of the waffle iron. One of the ladies said that this was the first time she was ever able to eat Texas. :) If someone would make one like that for Kansas, it would look like a broken waffle iron.

Although I didn't get a picture I thought I'd tell you that we stopped at Cabela's on the way home. When you stop at those sort of places time flies a lot faster.

I could tell you a lot more about the week, but that would take too long. Anyway, I need to get busy.

horses...

My sister Addy and I had to take some photos of our "pets". I don't remember if I've told you that our neighbor is keeping his 10 horses and donkey over here. His pasture needed some time off to grow back.  It's been awesome to have them around. I don't know if you've ever had the feeling of trying to give a horse a treat while 6 others are pushing you around trying to get to it. Interesting feeling...

One note here; it is hard to take pictures of horses because they see you standing there and "Oh great, treat time! What are you holding up to your face? I think I'll come closer and taste it."  Something like that happens in their head because they didn't want to stand there and pose. Anyway, we had fun and they sure are friendly.

The light in the morning can be pretty.
These 3 horses are actually the ones we started out with.
Kali, the paint, is my favorite of the whole bunch.

The branch got in my way, or maybe I should say I was standing in the wrong place.

Here is Dusty, the donkey. She is a nice, mean, funny, weird, little thing. Likes to bite you if you don't give her a treat. Shan, the dog, wouldn't leave her alone so she ended up in the picture.

Mattie has the prettiest face of all the horses. She is Addy's favorite.

Look at those eyes.

This is the "boss" but I don't think he is as bossy as one of the other horses. Stretch is a retired race horse.

Annie, is just full of muscle. You can't even see it really well, but she just looks amazingly strong.

This horse is my other favorite. Angie, is kinda an outcast right now because she is new. She was to busy eating and wouldn't raise her head for me. "You don't have a treat for me? Then forget it, I'm not into pictures."

For some reason Addy caught me at what it looks like I'm yelling at Walker. I'm not, just looks like it.

I'm kinda feeding Rush here. Rush is a sweet horse. Walker, the one beside him, is his girlfriend.

Me and Kali.  She stands still for anything.

Kali is also a champion barrel racer.

Dusty again, wanting another treat. That thing... This isn't her best side either.

Enough of horses for now, I need to get to work.
