Skillet Cornbread



For lunch today I made a new recipe called "Skillet Cornbread". I thought it tasted awesome!  It was very fast and easy to make. By the way, the picture isn't my cornbread. It was all gone too fast to get a photo. 


Skillet Cornbread

1/2 cup cornmeal
1/2 tsp. baking powder
1/4 tsp. salt
1 egg
1/4 cup milk
4 tsp. oil (divided)

In a bowl combine the cornmeal, baking powder, and salt. In another bowl, beat the egg, milk, and 3 tsp. oil. Stir into dry ingredients just until moistened. Heat remaining oil in a heavy 8" skillet over low heat. Pour batter into the hot skillet, cover and cook for 4-5 minutes. Turn and cook 4 minutes longer or until golden brown.

Serves 2


I'll add a note to this. It didn't take as long to cook as it said and I also didn't cover it.

Spring 2011

Here's some of the interesting things I've done this spring.


Worked at my church's Valentine Banquet.

Having People Over




On the 17th of this month, we had some families over for lunch. Afterwards we took a hay rack ride. This is Anna, Sara, Debbie, me and Mary on the back of the hay wagon. It was kinda windy.

April 2010

I looking at photos from last April and I thought I'd post a couple.
  


On April 8th, 2010 we burned our pasture.

It was something we had never done before. Thankfully, some neighbors or ours came over and showed us how to do it. 


There's something really awesome about watching fire running to meet fire.

And the other interesting thing I thought we did in April was have my 16th birthday party, of course. My sister Charis put it on and a bunch of girls came over to my Grandma's house to eat supper and play games. It is something I would definitely do again.

Flute...


  One thing I've been doing a lot lately is playing and practicing flute. I love playing the flute, but not all the time. Right now I practicing a lot for a high school flute competition in Wichita, Ks. So, I've gotten sick of playing so much. But, now I am used to all the more practicing I have to do and am really growing to like it. The nice thing is I'm getting a lot better from all of it. Although many flutists would put me to shame with all their practicing.
  I got my Pearl flute from Wichita Band Instruments about 2 years ago. If anyone is thinking of getting one, I would go there. They are very good and know what they're doing.

Hair...

Or should I say "hair styles"?  I was looking at photos from last fall. My oldest sister got married in Sept and I was looking at photos of me getting my hair done. So I decided to put some on.



I think it looked very pretty from the back.
